Apple Sauce
Fill an 8 qt. kettle with McIntosh or Cortland apples. Core the apples and cut into sixths. You do not need to peel the apples.
Add about ½ cup of water to the kettle. Cook over medium heat until soft, stirring occasionally to prevent scorching. Blend apples or put them through a food mill or strainer. This produces a beautiful pink, naturally sweet apple sauce. Makes 1 gallon, which can be frozen.
For zest you can add a few Red Hot candies. If you are using an early season apple like Lodi or Vista Belle, you might want to add a little sugar.
Applesauce Cake (No Sugar)
- 8 oz Pitted Dates
- 2/3 Cup Margarine
- 2 Cups Flour
- 1 ½ tsp Cinnamon
- 1 ½ Cup Unsweetened Apple Sauce, Hot
- ½ Cup Chopped Nuts
- 1 Cup Raisins
- 2 tsp Baking Soda
- 1 tsp Vanilla
- ¼ Cup Water
Chop dates, mix with water in saucepan, cook until thickened, stirring constantly. Beat together margarine, apple sauce, dates and vanilla. Sift together flour, soda & cinnamon, add to apple sauce mixture. Stir in raisins & nuts. Bake in Greased 9” x 13” pan at 375 for 40 minutes. Serve with maple or apple syrup.
CranApple Pie
- 9-inch pastry crust, two-crust pie
- ¾ cup brown sugar
- ¼ cup sugar
- ¾ cup all-purpose flour
- 1 tsp cinnamon
- 4 cups fresh cranberries
- 4 cups tart apples, cut and pared
- 2 tbsp butter
Preheat oven to 425 degrees F. Combine sugars, flour and cinnamon in a large bowl. Mix in the fruit. Place into a pastry-lined pan. Dot with butter and cover. Cut slits into the top to release pressure and bake for 40 minutes or until golden brown.
Cranberry BBQ Sauce
- 2 cups fresh cranberries
- ¾ cup sugar
- ¼ cup pulped orange juice
- ½ cup BBQ sauce
Heat berries, juice and sugar in sauce pan until sugar dissolves and the berries pop. Stir in the BBQ sauce until it is well blended.
